3. Sơ chế nguyên liệu:

  • Sơ chế mực: Đây là bước quan trọng quyết định độ ngon của món ăn.

Cách làm:

Bước 1: Ướp mực tươi với ít muối và hạt nêm khoảng 10 phút.

Bước 2: Phi thơm hành, tỏi và cho mực vào xào nhanh, sau đó trút ra đĩa, để riêng.

Bước 3: Cho thêm ít dầu vào chảo, khử dầu với ít hành cho thơm, sau đó cho lần lượt hành tây, dưa leo, nấm rơm, ớt chuông, thơm vào xào đều.

Bước 4: Khi thấy các nguyên liệu vừa chín tới, cho mực vào đảo đều, nêm lại gia vị với dầu hào, ít nước mắm và hạt nêm.

Cách làm:

Bước 1: Ướp mực với chao đỏ, 1 muỗng cà phê rượu thơm, 1 muỗng cà phê nước mắm, tỏi, dầu mè. Ướp trong khoảng nửa tiếng.

Bước 2: Trong lúc đợi mực thấm gia vị, bạn lấy chao trắng tán nhuyễn và trộn thêm ít sa tế, nước cốt chanh và ít đường cho vừa miệng.

Cách làm:

Bước 1: Bạn trộn đầu mực đã băm với thịt, nấm hương, nấm mèo, hành tím, hành xanh, thì là và các gia vị lại với nhau cho thật đều. Để như vậy khoảng 15 phút để các nguyên liệu thấm đều.

Cách làm:

Bước 1: Cắt mực thành từng khoanh, đem ướp với rượu trắng, tiêu và muối trong khoảng 15 phút.

Bước 2: Đánh trứng đều trong một chiếc tô lớn. Cho bột xù, bột mì, vụn bánh mì ra đĩa rộng.

Bước 3: Lăn mực qua bột mì, kế đến nhúng vào trứng và sau cùng áo đều lớp vụn bánh mì cùng bột chiên xù.

  • 1 kg mực tươi: rửa sạch và cắt miếng vuông trước khi khía ngang, dọc
  • 1 hũ sa tế
  • 2 cây sả tươi: băm nhỏ
  • 1 củ hành tây: lột vỏ và cắt miếng vuông hoặc múi cau
  • 3 trái ớt chuông đủ màu xanh, đỏ, vàng: thái miếng vuông
  • 1 ít thì là

Cách làm:

Món mực này tương tự như mực nhồi thịt nhưng vị ngọt đậm đà và thơm bùi hơn nhiều nhờ phần hạt sen và nước dừa.
